Savory Delights: Mastering the Art of Egg Bites at Home

Writer's picture: Lisa PinedaLisa Pineda

Dive into the delicious world of egg bites, the ultimate on-the-go breakfast that's as nutritious as it is delightful. These bite-sized wonders are packed with protein, customizable with your favorite add-ins, and perfectly portioned for busy mornings or a quick midday snack.

INGREDIENTS

  • 5 eggs

  • 1/2 cup egg whites

  • 1/4 cup unsweetened almond milk

  • 1/2 tsp salt

  • 1/4 tsp ground black pepper

  • sliced ham

  • 1/2-3/4 cup of fresh spinach (shredded into small pieces)

  • 1/4 of large red bell pepper (diced)

DIRECTIONS

  1. To whip up these mouthwatering egg bites, fire your oven to a cozy 350 degrees Fahrenheit. While the oven warms, give your muffin tin a generous misting of olive oil to ensure a non-stick nirvana for your bites.

  2. Grab a medium bowl and get whisking! Combine the eggs, almond milk, a pinch of salt, and a whisper of pepper until the mixture is as smooth as silk. Next, it's time to create the foundation of flavor: drop a tablespoon of diced ham, fresh spinach, and bell peppers into each muffin cavity, crafting a colorful tapestry of ingredients.

  3. Gently ladle the egg mixture over your savory triad until each muffin impression is contently filled, but leave a smidge of space at the top. Remember, these bites are little puffs of joy that will swell and stretch as they bake.

  4. Slide your tin into the oven and set a timer for approximately 17 minutes. Sit back and let the magic happen. When the timer dings, take a peek; if the tops of your egg bites are still too tender, grant them an extra 2 to 3 minutes in the oven's embrace.

  5. Once they're firm yet bouncy to the touch, pull them out and let them rest for a moment—your patience will be rewarded with perfectly cooked, heavenly egg bites. Enjoy!
